Roasted Mangoes with Brown Sugar Topping

The make-ahead brown sugar topping can be chilled until baking time. Serve this dessert warm and top it with dollops of fat-free ice cream.


Ingredients 4 serving

  • 2 medium ripe mangoes, halved lengthwise and pitted

  • 2 tablespoons brown sugar

  • 2 tablespoons flaked coconut

  • 2 teaspoons finely shredded orange peel

  • 2 teaspoons finely chopped crystallized ginger

  1. Place mango halves in a 2-quart rectangular baking dish. Combine brown sugar, coconut, orange peel, and crystallized ginger in a small mixing bowl. Sprinkle over mango halves.

  2. Bake in a 425°F oven about 10 minutes or until mangoes are hot, and topping just begins to brown. Makes 4 servings.
