Mimosa Fruit Salad

A splash of prosecco and a little orange juice transform a fresh fruit salad into the perfect brunch dish. To make ahead, prepare the fruit as directed, but don't combine with the mimosa dressing until just before serving so the bubbly maintains its fizz.



Ingredients 8 Servings

  • cups halved clementine segments

  • 2 cups sliced halved peeled kiwi

  • 2 cups diced watermelon, cantaloupe or honeydew melon

  • 1 cup halved blackberries

  • 1 cup quartered strawberries

  • 1 cup chilled prosecco

  • ½ cup orange juice

  • 2 tablespoons chopped fresh mint

  1. Combine clementines, kiwi, melon, blackberries and strawberries in a large bowl. Stir prosecco, orange juice and mint together in a small bowl. Pour over the fruit and stir gently.
